2 oz 100% agave Tequila

2 oz Coco Lopez ® cream of coconut

4 oz pineapple juice

1/4 cup crushed or small cubed ice

Shake it all in a cocktail shaker and serve in a chilled glass. Optional: garnish with pineapple wedge or sprinkle with shredded coconut.

Coco Lopez ® is made from a unique and natural process and it makes an obvious difference when making this drink. I have tried other brands and they are just not the same. Being a natural product, often the cream of coconut has solidified or congealed on the shelf. Simply place the can in warm water for a few minutes and it will re-liquify.

By definition a traditional piña colada is a cocktail consisting of pineapple juice, coconut, and rum. Obviously the name is Spanish and literally means: strained pineapple. This cocktail is a perfect example of how 100% agave tequila can improve upon a classic. After drinking this tequila version the standard rum piña colada seems to fall a bit short.
